Using a higher stall speed converter than needed will rob you of low end power. In some cases, it can damage the transmission. You just want to make sure the converter you are using matches the cam, intake, tire size and rear gear ratio you are using on your car. When it comes to HP rating, you want to make sure you do not exceed it.
